Collins has contributed to Javelina athletics in numerous ways for decades. She is the keeper of the javelina mascot, Porky, that makes appearances at all of the home football games. She is a member of the Javelina Club and was named the Javelina Club Member of the Year in 2012-13.

Collins has hosted and organized the annual Javelina Club brunch to celebrate Javelina women's athletics and solicits items for the event. She helps with the annual football barbecue, hosts events at her home, bakes cookies for athletes and attends many of the out-of-town sporting events to show support for Javelina athletics. Before each football road games, she gets koloaches for the players so they can have snacks on the road. Collins has served as a member of the Javelina Alumni Association board of directors, is a past treasurer for the alumni association and served on the alumni bord for six years.

She currently serves as a Texas A&M University-Kingsville Foundation Board trustee. She was graduated from Texas A&I in 1972 with a bachelor of science in home economics. Collins and her late husband, Jerry Collins, established the Jackie and Jerry Collins Athletics Program Endowment in support of Javelina athletics.

She is a member of the President's Circle and was a Legacy Society honoree in 2017. Collins is the fourth inductee named for the 2023 Javelina Hall of Fame induction. Former softball player Cassie Anderson, former basketball player Isaac Washington and former football player Abel Gonzalez were named earlier.
